**Job Title:** Production Assistant, Central Kitchen **Role Summary:** Assist the Production Manager in overseeing daily operations of a central kitchen preparing meals for schools, daycares, and community centers. Ensure compliance with hygiene, safety, and quality standards while managing a production team. **Expectations:** - Proven experience in large-scale food production, preferably in public or institutional settings. - Strong team leadership and organizational skills. - Familiarity with HACCP protocols, hygiene regulations, and food safety compliance. - Proficiency in administrative tools (e.g., CEGID, Presto) for inventory and production management. **Key Responsibilities:** 1. Supervise and coordinate the production team to meet daily meal targets (approx. 6,800 meals). 2. Support the Production Manager by managing workflows during absences, ensuring continuity. 3. Plan and execute meal preparations (menus, portioning, special dietary needs). 4. Monitor adherence to quality, hygiene, and HACCP standards; propose process improvements. 5. Track equipment, inventory, and supply chain logistics in collaboration with other departments. 6. Enhance operational efficiency through team training and feedback. **Required Skills:** - Team management and operational planning under fast-paced conditions. - Technical knowledge of food safety, hygiene regulations, and quality control. - Adaptability, time management, and strong communication for cross-departmental collaboration. - Advanced proficiency in kitchen production systems and inventory software. **Required Education & Certifications:** - Vocational certification in culinary arts, catering, or equivalent (e.g., CAP/BEP Cuisine, BAC Pro Restauration). - HACCP certification or equivalent food safety training preferred.
